These delicious and fluffy Pumpkin Spice Latte Donuts combine two of our favorite flavours into one delicious baked donut! They are made with canned pumpkin puree, pumpkin spice, and instant coffee powder, creating that ever-loved fall flavour in donut form!

MAKING THE PUMPKIN SPICE LATTE DONUTS

1.Mix wet ingredients together: In a large mixing bowl, add the oil, white sugar, brown sugar, pumpkin puree, egg and vanilla, then whisk together until well-combined.

2. Whisk the dry ingredients together: In a separate bowl, add the flour, baking powder, salt, instant coffee powder, and the spices. Whisk them together until well incorporated.

3. Add the dry ingredients to the wet: Carefully pour the dry ingredients into the mixing bowl with the wet ingredients, then mix together, until the mixture is just combined and smooth. Don’t overbeat!

4. Pipe batter into donut pans: Add the batter into a large piping bag, and pipe the batter into the donut pans. Fill each donut cavity about 1/2 full.

5. Bake: Place into the oven to bake for about 11 minutes. When they are done, they should be springy on the top and a tooth pick should come out clean.

6. Cool the Pumpkin Spice Latte Donuts: Place baked pumpkin donuts onto a cooling rack, and allow to cool completely.

7. Glaze: When cooled, dip each donut in the glaze!

PLACE DONUT BATTER INTO A PIPING BAG FOR UNIFORM DONUTS

By far, the easiest way to transfer the baked pumpkin spice latte donut batter into the donut pans is by using a piping bag!. I find that I get the best control over the size of the donuts, ensuring that they are all unison in size, and bake evenly.  It’s also just a whole lot cleaner of a process. However, feel free to spoon the donut batter into the pans as well.

Marble Glaze

If you wanted a marble effect glaze on your pumpkin latte donuts, like the ones pictured, its actually quite simple to achieve! Basically make 2 glazes – one (recipe below) made with instant coffee, hot water, confectioners sugar and a little brown food colouring, the second glaze will just be made with hot water and confectioners sugar. This gives you one brown glaze and one white glaze.

Spoon the two glazes, alternating between the two, into a larger bowl, then after all the glazes have been added, use a knife or skewer to very lightly swirl them together. Now you’re good to dip!

Pumpkin Spice Latte Donuts

  • 2 cups (240g) All-Purpose Flour,, properly measured †
  • 2 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 2 tsp Instant Coffee Powder
  • 1 ½ tsp Pumpkin Pie Spice
  • 1/2 tsp Cinnamon
  • 2/3 cup (147g) Vegetable Oil
  • 3/4 cup (150g) White Sugar
  • 3/4 cup (165g) Dark Brown Sugar
  • 1 15oz Can (420g) Pumpkin Puree,, about 1.75 cups
  • 1 ½ tsp Vanilla
  • 3 Large Eggs

Coffee Glaze

  • 1 ½ cups (180g)Confectioners Sugar
  • 3-4 tbsp Hot Water
  • 1 tsp Instant Coffee Powder
  • 1 tsp Vanilla

Instructions
 

Pumpkin Spice Latte Donuts

  • Preheat oven to 350°F, and prepare 3 donut pans with cooking spray. Next, in a medium mixing bowl, add flour, baking powder, salt, coffee powder and the spices. Whisk together to combine, then set aside.
  • In a large mixing bowl, add oil, white sugar, brown sugar, pumpkin puree, vanilla and eggs.. Beat with a hand-mixer or whisk until very smooth.
  • Add dry ingredients to the wet ingredients, and beat just until smooth.
  • Add batter to donut pans by spoon or using a piping bag, then transfer to oven to bake for 11-13 minutes, or until an inserted toothpick comes out clean. Allow to cool completely before glazing.

Coffee Glaze

  • Combine instant coffee and hot water until coffee has dissolved. Add the hot coffee to a bowl with confectioners sugar and vanilla. Mix until smooth. If needed, adjust with more confctioners sugar or more hot water to achieve perfct glazing consistency.
