These delicious and fluffy Pumpkin Spice Latte Donuts combine two of our favorite flavours into one delicious baked donut! They are made with canned pumpkin puree, pumpkin spice, and instant coffee powder, creating that ever-loved fall flavour in donut form!
Preheat oven to 350°F, and prepare 3 donut pans with cooking spray. Next, in a medium mixing bowl, add flour, baking powder, salt, coffee powder and the spices. Whisk together to combine, then set aside.
In a large mixing bowl, add oil, white sugar, brown sugar, pumpkin puree, vanilla and eggs.. Beat with a hand-mixer or whisk until very smooth.
Add dry ingredients to the wet ingredients, and beat just until smooth.
Add batter to donut pans by spoon or using a piping bag, then transfer to oven to bake for 11-13 minutes, or until an inserted toothpick comes out clean. Allow to cool completely before glazing.
Coffee Glaze
Combine instant coffee and hot water until coffee has dissolved. Add the hot coffee to a bowl with confectioners sugar and vanilla. Mix until smooth. If needed, adjust with more confctioners sugar or more hot water to achieve perfct glazing consistency.
