One Bowl SunButter m&m Blondies

These decadently chewy and buttery SunButter M&M Blondies are the perfect easy to make treat for any occasion, including Valentine’s Day! Even better, this recipe is a one-bowl recipe, which means you’ll be enjoying these m&m blondies with minimal clean up! These blondies are chewy, tender, and loaded with chocolate chips, m&m’s and fun colourful sprinkles!
WHAT IS SUNBUTTER?
SunButter, for those who have never heard of it or had the pleasure of trying it, is a seed-butter spread that is made from sunflower seeds! SunButter is an excellent alternative to peanut butter and other nut-butters for any one with allergies, sensitivities, or looking to incorporate a delicious, but healthier alternative to most nut-butters! It has 7g of protein per serving, is jam-packed with vitamins & minerals, and has absolutely no trans-fat and actually has less saturated fat than your typical almond butter!

How to make these SunButter m&m Blondies
1. Melt butter and SunButter: Add butter and SunButter to a large mixing bowl, then place into the microwave for 30 seconds or until butter is fully melted. Whisk the butter and SunButter until smooth and combined.
2. Add sugars, eggs, and vanilla: Add the sugar, brown sugar, eggs, and vanilla to the bowl. Whisk until those ingredients are well-combined with the Sunbutter/butter mixture and everything is nice and smooth!
3. Sift in flour, baking powder and salt: Add the flour, baking powder, and salt to a sieve, then sift them into the batter. Next, mix until they are combined into the batter.
4. Fold in m&m, chocolate and sprinkles: Add m&ms, chocolate and sprinkles to the batter, then fold in using a spatula.
5. Bake: Pour the batter into a pan, then bake in the oven! When done, allow to cool, then slice into squares or use a heart-shaped cookie cutter to cut little hearts out.
Valentine’s Day Treat
To make these SunButter m&m blondies Valentines Day themed, I used heart shape cookie cutters to cut the blondies out! Feel free to use whatever size cookie cutter you have, even using multiple sizes for different sized servings!
Alternatively, feel free to cut these m&m blondies into classic squares! If cutting to squares, this recipe makes between 20 and 24 squares!
THE RIGHT AMOUNT OF FLOUR
Too much flour in these one bowl blondies can result in a blondie that is tough and dry, too little flour and the blondies will have no structure. Using the perfect amount of flour means weighing it! Volumetric measurement of flour can sometimes over-measure by up to 100% – that means that you could be adding double the required flour, leading to a dry and tough blondie! Measuring the flour by weight ensures that your blondies will be perfectly chewy and tender every. single. time.
If you do not own a kitchen scale, ensure you are using proper volumetric measuring practices. To measure flour correctly, use a spoon to scoop the flour into the measuring cup, then level off with a straight edge. Do not pack the flour into the cup, or scoop with the measuring cup straight from the bag/container.

Ingredients
- 3/4 cup (171g) Unsalted Butter,, at room temperature
- 1/2 cup (120g) Natural SunButter
- 1 cup (220g) Light Brown Sugar
- 1/2 cup (100g) White Sugar
- 2 Large Eggs
- 2 tsp Vanilla Extract
- 2 cups (240g) All Purpose Flour,, measured correctly or preferably weighed
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup (88g) Chocolate Chips
- 1/2 cup (100g) M&M’s
- 1/4 cup (50g) Jimmy Sprinkles
Instructions
- Preheat the oven to 350F and prepare a 9×12” pan with spray and parchment paper. Add butter and SunButter to a large mixing bowl, then place into the microwave for 30 seconds or until butter is fully melted. Whisk the butter and SunButter until smooth and combined.
- Add the sugar, brown sugar, eggs, and vanilla to the bowl. Whisk until those ingredients are well-combined with the Sunbutter/butter mixture.
- Add the flour, baking powder and salt to a sieve, then sift them into the batter, then whisk until they are combined into the batter. Fold m&ms, chocolate and sprinkles to the batter.
- Pour the batter into the pan, then bake in the oven for 20 minutes or until the centre just sets.
- When done, allow to cool, then slice into squares or use a heart-shaped cookie cutter to cut heart shapes.
