Guava Dragon Fruit Popsicles

Made with guava juice, fresh dragon fruit, Greek yogurt, and just a little sweet hint of agave, these popsicles are extremely simple to make, and relatively healthy! Equipment Required
Making these Passion Fruit Coconut Tropical Popsicles is simple and really only requires 2 pieces of special equipment:
Blender: The blender is used to puree the passion fruit pulp and mango up into liquid form! You can also use a food processor for this.
Popsicle Molds: Making popsicles, of course, requires some sort of popsicle mold! There’s a ton on the market, but I really like these from Fox Run, however these also look like a cheaper similar alternative! (affiliate links)
Ingredients
Greek Yogurt: I like to use at least a 2% fat Greek yogurt for these Guava Dragon Fruit Popsicles, as the fat aids in the cream texture! Feel free to use dairy free yogurt to make these vegan!
Guava Juice: I am seriously obsessed with guava juice! The flavor is tropical, fruity, and deliciously sweet! It just screams summer to me. Guava juice or guava nectar can be used.
Dragon Fruit: Dragon Fruit, otherwise known as pitaya, is a tropical fruit that has a white interior that is speckled with black seeds, and an extremely vibrant pink exterior! Dragon Fruits have a lightly creamy texture, and are very delicately sweet in flavor. To peel a Dragon Fruit, simply cut off the top and bottom, then make a cut along the length of the fruit. Next, just simply pull the skin right off!
Agave Syrup: Agave is a natural sweetener that comes from the blue agave plant. This sweetener is totally optional in these Guava Dragon Fruit Popsicles – if you prefer a sweetener popsicle add as much agave as you want, but if you prefer a lighter popsicle you can just omit the agave! Feel free to substitute corn syrup or honey if you want!
Food Coloring: The food coloring is also obviously optional! Without the food coloring these popsicles are very light peach in color.

How to Make the Guava Dragon Fruit Popsicles
1. Blend everything: Peel the dragon fruit and add it into a blender, along with the guava juice, Greek yogurt, and food coloring (if using). Blend until smooth!
2. Sweeten to your liking: Add your desired amount of agave syrup – I used about 1 tbsp, then stir or blend to mix it with the puree.
3. Add puree to popsicle molds: Pour the puree evenly into your popsicle molds.
4. Add popsicle sticks and freeze: Place a popsicle stick into each popsicle, then place the Passion Fruit Coconut Tropical Popsicles into the freezer for at least 8 hours, or preferably overnight. If your popsicle molds do not have a lid/holder that keeps the popsicle sticks upright, freeze the popsicles for 1 hour, then place the popsicle sticks in.
