Tahini Chocolate Chip Banana Bread

Ingredients

  • 5 tbsp Tahini (if separated in jar make sure to mix it together before adding)
  • 3 tbsp Unsalted Butter, melted
  • 1 cup Dark Brown Sugar
  • 2 Eggs
  • 3 Overripe Bananas, mashed very smooth
  • 1 tsp Vanilla
  • 1 1/2 cups All Purpose Flour, measured correctly†
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Full-Fat Sour Cream
  • 3/4 cup Mini Chocolate Chips, plus more for topping

Instructions

  • Preheat oven to 350°F. Meanwhile, add the melted butter, tahini, brown sugar, eggs, mashed bananas, and vanilla to a large mixing bowl, and beat with a handmixer until it has formed a smooth consistency.
  • In a separate bowl, add the flour, baking soda, and salt. Whisk until well combined, then add this dry mixture to the wet mixture. beat until just combined, ensuring not to overmix.
  • Add sour cream and chocolate chips to the batter, and fold until well dispersed.
  • Place into a 9×5” loaf pan fitted with parchment paper, or well oiled, top with more mini chocolate chips, and bake in the oven for about 55 minutes.

Notes

† to measure flour correctly, use a spoon to scoop the flour into the measuring cup, then level off with a straight edge. Do not pack the flour into the cup, or scoop with the measuring cup straight from the bag/container. Alternatively, weigh the flour (1 cup = 120g or 4oz)
