Ingredients
Mandarin and Goat Cheese Salad
1 package (142g or 5oz) 50/50 Spring Mix & Spinach
1 cup Mandarin Slices, drained
1/2 cup Crumbled Soft Goat Cheese
1/2 cup Honey Roasted Almonds
1 Avocado, diced or sliced
Entire Champagne Vinaigrette Recipe
Honey Roasted Almonds
1 cup Sliced Almonds
1 tbsp Honey
1 tsp Vegetable Oil
1/8 tsp Kosher Salt or Coarse Sea Salt
1 tbsp Sugar
Additional Table Salt, for sprinkling
Champagne Vinaigrette
1/4 cup Champagne Vinegar
1/4 cup Quality Extra Virgin Olive Oil
4 tsp Honey
Salt, to taste
Instructions
Mandarin and Goat Cheese Salad
Add all ingredients into a large bowl, toss to combine. Serve immediately as 6 side servings or 2-3 Large Servings.
Honey Roasted Almonds
Preheat oven to 350°F and prepare a baking sheet with parchment paper or silicone mat. In a microwave-proof bowl, add honey and oil and microwave for 30 seconds. Stir to combine.
In a medium mixing bowl, add almonds, honey/oil mixture, and salt, then toss to combine. Spread evenly over baking sheet and place into the oven for 15 minutes, stirring every 5 minutes.
Remove from oven, sprinkle with a little bit of table salt, and the sugar. Toss to combine and then allow the almonds to cool on the baking sheet. 5 minutes into cooling, toss the almonds around again to ensure they don’t stick to each other. Allow to cool for another 20-30 minutes. Remove almonds from baking sheet to use immediately or store in an airtight container for up to 3 days, or in the freezer for 6 months.
Champagne Vinaigrette
Add all ingredients into a bowl and whisk well to emulsify. Use immediately.
Alternatively, add all ingredients into a jar with a lid, and shake vigorously for 15 seconds.
