How to Make Tequila Lime Chicken
Who doesn’t love a good grilled chicken breast? The tequila lime chicken starts with adding all the marinade ingredients into a large plastic bag and allowing it to sit for at least 4 hours. I prefer to allow mine to sit overnight, for maximum absorption of the marinade. After the marinating period, remove the chicken breasts from the marinade, pat them dry and season with a bit of salt and pepper. Place onto the grill and cook for about 6 or so minutes per side. When done, allow the chicken to sit for 5 minutes before you start cutting it up. This resting period just ensures it won’t dry out upon slicing.

Tequila Lime Grilled Chicken Marinade
- 4 Chicken Boneless Skinless Chicken Breasts
- 1/2 cup Freshly Squeezed Lime Juice
- 1/2 cup Olive Oil
- 1/4 cup Tequila
- 1 tbsp Honey or Agave
- 4 Garlic Cloves,, crushed or minced
- 2 tbsp Chopped Fresh Cilantro
- 2 tsp Salt
- 1 tsp Adobo Sauce, (use same can for burrito sauce)
- 1 tsp Cumin
Chipotle Burrito Sauce
- 1/2 cup Mayo
- 1/4 cup Sour Cream
- 1 chipotle pepper in adobo
- 2 tsp adobo sauce
- Juice of 1 Lime
- 1 tbsp Water
- 1/4 tsp Kosher Salt
- 1/4 tsp Cumin
- 1/4 tsp Smoked Paprika
Tequila Lime Grilled Chicken Burrito Bowls
- 4 Tequila Lime Grilled Chicken Breasts,, diced
- 2 cups Cooked Brown Rice
- 1 cup Frozen Corn,, thawed
- 1 cup Black Beans,, drained and rinsed
- 1 cup Cojita Cheese,, or cheese of your liking
- 1/2 cup Salsa
- 1/2 cup Sour Cream
- 1/2 cup Guacamole or Diced Avocado
- 1/4 cup Coarsely Chopped Cilantro
- Burrito Sauce, (above)
- 1 Lime,, cut into quarters
Instructions
Tequila Lime Grilled Chicken Marinade
- Add all ingredients to a large Ziploc bag. Let sit for at least 4 hours or preferably overnight.
- Remove chicken from marinade, pat dry, and season with salt and pepper. Place onto well-oiled grill. Grill each side for about 8-10 minutes, or until cooked throughout. Allow the chicken to rest for 5 minutes before slicing up.
Chipotle Burrito Sauce
- Add all ingredients to a food processor or blender. Puree until smooth. Store in an airtight container in the fridge for up to 4 days.
Tequila Lime Grilled Chicken Burrito Bowls
- To make 4 burrito bowls: add ¼ of each ingredient to each bowl. Top with the burrito sauce, chopped cilantro, and a squeeze of lime juice. Serve immediately or store in airtight containers for meal prepping.
