Sweetness of Sparkling Wines

I don’t know about you, but the sweetness levels of sparkling wines have always confused me! Sparkling wine and champagne typically come in 5 different sweetness levels  – extra brut, brut, extra dry, dry, and demi-sec. While it may seem like a champagne that is labelled as “extra-dry” would be, well, extra dry – it actually is quite the contrary! Extra brut is the driest and least sweet, coming in at almost no added sugar, while demi-sec is the sweetest with up to 50g of added sugar per litre. Extra-dry champagne and sparkling wine actually come in with about 12g of extra sugar, making them crisp and lightly sweet! I find extra-dry sparkling rose wines are perfect for these Strawberry Guava Mimosa’s!

Strawberry Guava Mimosa Ingredients

Fresh Strawberries: The fresh strawberries in this Strawberry Guava Mimosa recipe are pureed with the guava nectar and strained through a fine-mesh sieve to remove the seeds!

Guava Nectar: Guava Nectar is a rich, very sweet juice made from guavas! You may also use guava juice.

Rose Sparkling Wine: Instead of traditional champagne, this Strawberry Guava Mimosa recipe uses Sparkling Rose Wine! The sparkling rose wine is cheaper than traditional champagne and has a nice fruity undertone. As mentioned above, use an Extra-Dry Sparkling Rose Wine.

Mimosa Ratio

The optimal and traditional ratio for mimosa’s is typically 50/50 – meaning 50% sparkling wine and 50% juice! That being said, if you prefer a less sweet version of this Strawberry Guava Mimosa, feel free to use less juice and more sparkling wine. And vice versa, if you want a sweeter mimosa with less alcohol just use more juice!

Tips for the Perfect Strawberry Guava Mimosa

• Well chilled juice and sparkling wine – I feel like this one is a no-brainer! The sparkling wine and juice should be very cold and straight from the refrigerator! I mean,  no one likes a warm drink!

◦ Use champagne glasses – champagne glasses are actually specially designed to retain the sparkling wines carbonation, meaning the mimosa will stay bubbly!

• Pour sparkling wine in at an angle – have you ever seen how they pour beers? Well pouring sparkling wine should be done the exact same way! Pouring at an angle reduces the amount of foam build up, and therefore retains the bubbliness. A 45° angle is optimum.

◦ Don’t stir – the more you agitate the sparkling wine, the more it loses it’s carbonation.

Ingredients
 

  • 1 ½ cups Halved Strawberries,, leaves removed
  • 1 ½ cups Guava Nectar or Juice,, well chilled
  • 750 mL (25.4oz) Bottle of Extra-Dry Sparkling Rose Wine,, well chilled

  • Blender

Instructions
 

  • Add strawberries and guava juice to a blender, then blend until strawberries are broken down completely. Pour this mixture over a fine mesh-sieve to remove excess pulp and seeds.
  • Pour sparkling wine into champagne flutes, filling them about 50% full of sparkling wine liquid. Once the bubbles have settled, top the other 50% with strawberry guava mix. Enjoy!
