Ingredients Notes

SunButter: SunButter is an excellent nut-free alternative to other nut butters, such as peanut butter. It is packed with a ton of vitamins, minerals and protein, and is the perfect partner to anything chocolate!

Semi-Sweet Chocolate: I think semi-sweet chocolate is the perfect hybrid of milk and dark chocolate, and pairs wonderfully with the SunButter layer in the fudgesicles.

Dutch Pressed Cocoa: This type of cocoa powder is less acidic, so it delivers a more smooth, chocolatey flavour to the popsicles.

How to Make the Creamy SunButter Chocolate Fudgesicles

1. Chocolate fudgesicle layer: add cream, sugar, cocoa powder, corn starch, vanilla and salt to a medium saucepan. Heat until simmering, then pour over chopped chocolate. Stir then allow to sit for 2-3 minutes to melt the chocolate, then whisk until smooth.

2. Cool chocolate layer: Cover the chocolate layer, then place into the fridge to cool for 1-2 hours.

3. SunButter Layer: Add all of the SunButter layer ingredients to a medium saucepan. Heat until sugar has completely melted, and mixture is smooth. Allow to cool for 10 minutes.

4. Pour into popsicle molds: Spoon the SunButter layer into the popsicle mold first, then pour the chocolate fudgesicle layer into the mold next. Use a popsicle stick to lightly marble each popsicle.

5. Freeze: Place a popsicle stick into each fudgesicle, then place on mold top, and place into the freezer for 6-8 hours, or overnight.

Tips & Tricks

To get that nicely defined, slightly marble bottom to these Chocolate SunButter fudgesicles, I recommend you allow the chocolate layer to full cool in the fridge before pouring into the molds.

To remove the creamy Chocolate fudgesicles from their molds, run the molds under running warm water for a few seconds on each popsicle cavity, while avoiding the top of the mold, or dunk the popsicle mold into a sink of hot water (avoiding the top). This should loosen the fudgesicles enough for you to easily remove them. 

Equipment Required

For this recipe, you’ll just need a popsicle mold and some popsicle sticks! Here’s a link (affiliate) to the popsicle mold I used for these fudgesicles.

Storage

Freezer: Once frozen, these chocolate fudgesicles can be stored in the freezer for up to 6 weeks. I recommend removing them from the mold and placing into an airtight container or freezer bag.

I don’t have SunButter, what can I use instead?

If you aren’t allergic to peanuts, feel free to use peanut butter for these chocolate fudgesicles.

Can I make these dairy free?

Yes, use mixed canned coconut milk (full fat), instead of cream. As well, substitute the chocolate for dairy-free chocolate.

How long does it take the fudgesicles to freeze?

6-8 hours typically. I like to make these the night before, and just freeze them overnight – just to be safe!

Can I use regular cocoa powder?

Yes, it may just taste slightly more acidic than dutch-processed cocoa.

Can I use milk, instead of cream?

I highly recommend using cream – however, you can use 3.25% whole milk in a pinch

Variations

Peanut Butter: Substituting peanut butter instead of SunButter, would be great for this fudgesicle recipe!

Nutella: Nutella instead of SunButter, would also make an incredible fudgesicle.

Dairy Free: Make these. fudgesicles dairy free by substituting full-fat (canned) coconut instead of cream, and using dairy-free chocolate.
