These easy to make and super satisfying burrito bowls feature grilled tequila lime chicken, a homemade chipotle burrito sauce, and all the other must-haves for burrito bowls!

Ingredients

Tequila Lime Grilled Chicken Marinade

  • 4 Chicken Boneless Skinless Chicken Breasts
  • 1/2 cup Freshly Squeezed Lime Juice
  • 1/2 cup Olive Oil
  • 1/4 cup Tequila
  • 1 tbsp Honey or Agave
  • 4 Garlic Cloves, crushed or minced
  • 2 tbsp Chopped Fresh Cilantro
  • 2 tsp Salt
  • 1 tsp Adobo Sauce (use same can for burrito sauce)
  • 1 tsp Cumin

Chipotle Burrito Sauce

  • 1/2 cup Mayo
  • 1/4 cup Sour Cream
  • 1 chipotle pepper in adobo
  • 2 tsp adobo sauce
  • Juice of 1 Lime
  • 1 tbsp Water
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Cumin
  • 1/4 tsp Smoked Paprika

Tequila Lime Grilled Chicken Burrito Bowls

  • 4 Tequila Lime Grilled Chicken Breasts, diced
  • 2 cups Cooked Brown Rice
  • 1 cup Frozen Corn, thawed
  • 1 cup Black Beans, drained and rinsed
  • 1 cup Cojita Cheese, or cheese of your liking
  • 1/2 cup Salsa
  • 1/2 cup Sour Cream
  • 1/2 cup Guacamole or Diced Avocado
  • 1/4 cup Coarsely Chopped Cilantro
  • Burrito Sauce (above)
  • 1 Lime, cut into quarters

Instructions

Tequila Lime Grilled Chicken Marinade

  • Add all ingredients to a large Ziploc bag. Let sit for at least 4 hours or preferably overnight.
  • Remove chicken from marinade, pat dry, and season with salt and pepper. Place onto well-oiled grill. Grill each side for about 8-10 minutes, or until cooked throughout. Allow the chicken to rest for 5 minutes before slicing up.

Chipotle Burrito Sauce

  • Add all ingredients to a food processor or blender. Puree until smooth. Store in an airtight container in the fridge for up to 4 days.

Tequila Lime Grilled Chicken Burrito Bowls

  • To make 4 burrito bowls: add ¼ of each ingredient to each bowl. Top with the burrito sauce, chopped cilantro, and a squeeze of lime juice. Serve immediately or store in airtight containers for meal prepping.
