Culinary Lavender vs Regular Lavender

It is important in making this ice cream, or any other recipe that involves lavender, that you use Culinary Grade Lavender. Firstly, culinary grade lavender is the only safe lavender to consume, because it has been prepared and processed in a food-grade environment, and has only had good-grade chemicals used on it during the growing process. Secondly, culinary lavenders are more flavorful and aromatic than their non-culinary counterparts. There are many varieties of lavender out there, but culinary lavender uses a varieties that are more sweet and have a sweet fragrance as well – making them perfect for edible usage.

What is Earl Grey Tea?

Earl Grey tea is a black tea that has been flavored with the rind of a bergamot orange. Bergamot orange is a citrus fruit that is likely the hybrid of lemon and bitter orange, which makes it extremely aromatic and zesty. The addition of this fruit, or rather the oil from its rind, makes Earl Grey tea slightly floral, citrusy, and exceptionally fragrant.

Mixing the Earl Grey tea with milk and vanilla makes for an extremely delightful experience. Known has a ‘London Fog Latte’, the drink is creamy, sweet, floral, and really just down right luxurious. So what could be better than a London Fog made into ice cream?!

How to Make No-Churn Ice Cream

Making no-churn style ice cream requires no special equipment (except maybe a hand mixer or stand mixer for ease), uses only a few ingredients, and is pretty easy to make!  A basic no-churn ice cream starts with the whipping of heavy cream to stiff peaks, followed by the folding in of sweetened condensed milk, and whatever flavorings, and then of course a freezing period.

This Lavender Earl Grey Ice Cream involves the creation of 2 separate batches of ice cream that are swirled together before freezing, to create that lovely marbling effect. However, if you don’t care about the marbling effect, you can make one single batch by steeping the tea and lavender together in the same bowl.

Start by warming up 1/2 cup of whole milk until simmering. Remove the milk from the heat and divide it equally into 2 separate bowls/cups. In one of the bowls add the dried lavender & food coloring, and in the other add the Earl Grey tea bags. Place plastic wrap over the surface of the milk (to ensure a skin does not form) and place both into the fridge to cool completely – it’ll be at least 4 hours. When cool, remove the tea bags and strain out the lavender.

Next, whip the heavy cream until stiff peaks have formed, then fold in the sweetened condensed milk carefully. Divide the whipped cream mixture into 2 separate bowls, and add the lavender-milk to one and the Earl Grey-milk + vanilla bean paste to the other, and carefully fold the milks into their respective whipped cream mixture.  Now, grab a loaf pan and pour each of the mixtures into the loaf pan (I like to alternate them to enhance the marbling), then grab a knife and use it to swirl the mixtures together. Cover the top with plastic wrap then place the loaf pan into the freezer to firm up, for at least 6 hours, then enjoy!

Ingredients
 

  • 1/2 cup Whole Milk
  • 1 tsp Dried Lavender
  • Purple Food Coloring
  • 1 Earl Grey Tea Bag
  • 1 tsp Vanilla Bean Paste or Vanilla Extract
  • 2 cups Heavy Cream,, cold
  • 12 oz Sweetened Condensed Milk

Instructions
 

  • Add whole milk to a small saucepan over medium heat. Bring to a simmer then remove from the heat. Divide the milk equally into two separate bowls. Add lavender & purple food coloring to one bowl, and the Earl Grey tea bag & vanilla to the other bowl. Place plastic wrap over the surface of each bowl (to ensure a skin doesn’t form) and place both bowls into the fridge to cool completely – about 2-3 hours. When cool, remove the tea bag from the one, and strain the lavender out from the other.
  • Add heavy cream to a stand mixer fitted with the whisk attachment. Beat until stiff peaks have formed, then carefully fold in the sweetened condensed milk.
  • Equally divide the sweetened whipped cream into 2 separate bowls, then pour the lavender infused milk into one bowl, and the Earl Grey infused milk into the other. Carefully fold each of these infused milks into the whip cream, then pour each of the mixtures into a loaf pan. Using a knife, swirl the two mixtures together to achieve that marbled look.
  • Cover and place into the freezer to firm up for at least 6 hours.
